Veggie Egg Scramble

ONE OF THE MOST SIMPLE AND HEALTHY BREAKFASTS YOU CAN MAKE.  CHOP UP ANY KIND OF VEGETABLES YOU HAVE- LITERALLY ANYTHING. 1-2 CUPS OF IT.   SAUTE THEM FOR A FEW MINUTES IN SOME COCONUT OIL THEN ADD YOUR EGGS, OR EGG WHITES OR BOTH AND STIR UNTIL COOKED THROUGH.  ADD GARLIC POWDER, PEPPER AND SOME TAPATIO, MIX IT UP AND EAT IT! YUM!

EGG MUFFINS

Another simple egg dish that you can add meat to or just vegetables. They're great for on the go!  Whisk together 12 eggs or mix half equivalent to egg whites.  Add in seasonings and add in 2 cups of chopped vegetables (kale, broccoli, etc) and cooked meat if desired.  Stir together then divide evenly into silicone muffin cups.  Cook away and voila! Breakfast muffins:)
